Butcher Challenge in Hospitality Fiesta 2016

Kota Kinabalu: It takes less than two minutes for a professional chef to cut and debone a whole chicken, according to the organiser of the 19th Sabah Hospitality Fiesta 2016.And to prove it, the fiesta, which will be held this coming Nov 5 and 6 at the Grand Ballroom of the Klagan Regency Hotel, will feature the Butcher Challenge category under the Professional Category.

"This event is for the chefs to participate and showcase their ability and speed in butchering within a specified duration," said organising chairman Alvin Ting during a press conference here, Wednesday, adding that so far, eight professionals have already confirmed their participation in the category.

Ting said the challenge is only one of 14 Professional Category challenges in the two-day annual event which include Decorated Wedding Cake, Pastry Showpiece, Seafood Platter, Meat Platter, Individual Fruit and Vegetable Carving, Bartender Flair: Cocktail, Nescafe Tarik Competition, Stewarding Race, Blackbox: Commis-Demi, Blackbox: CDP-Sous, Blackbox: Modern Chinese Cuisine, Table Setting and Professional Bed Making.

The Stewarding Race, he said, will be one of the most exciting challenges with participants expected to complete the race under 65 seconds.

"Last year, we had participants who managed to do it in just under 60 seconds," he said.

The annual event has attracted its biggest ever participation with a total of 333 registrations from 253 hotel entries and 80 college entries from Kota Kinabalu, Sandakan, Keningau, Beaufort, Negri Sembilan, Labuan and Sarawak this year.

The fiesta, which was first initiated in 1997 by students of Asian Tourism International College (ATIC), has become one of the most anticipated events in Sabah and is listed as one of Sabah's annual events in the calendar of Sabah Tourism Board.

"The annual Sabah Hospitality Fiesta is a display of the high standards of passion and commitment of the hospitality and tourism industry players not only in Sabah but from other parts of Malaysia as well.

"This is also a great opportunity for the participants to showcase their talents and skills in their respective fields and to promote the spirit of camaraderie among the industry players," said Ting.

Under the Apprentice Segment, the Bed Making Challenge had been added to the list of competitions where participants will be judged based on techniques and procedures, finesse and neatness, professionalism, punctuality and impressive bed making demonstrations.

The other categories under the segment include Decorated Dummy Wedding Cake, Individual Fruit and Vegetable Carving, Bartender Flair: Cocktail, Blackbox: Apprentice and Table Setting.

The competitions will be judged by invited international judges from renowned hotels and colleges as well as chefs from Malaysian Association of Hotels (MAH).

Medals are awarded based on the points collected with those scoring 90 per cent and above awarded gold medal, 80 to 89 per cent silver medal and 70 to 79 per cent bronze medal.

"It is normal that more than one person is awarded the gold medal because in this competition, it is more about challenging themselves and not competing with one another," said Ting.

Sutera Harbour is the defending overall champion for the Professional Category, while Tunku Abdul Rahman University College (TAR College) has a good chance of bringing home the challenge trophy in the Apprentice Segment, having won the title two years in a row.

"We are very happy that the event is getting more participations every year. Of course, we would like to open the competition to make it more interesting and hopefully, in the next few years, we would be able to attract participants from Brunei Darussalam and the Philippines and other countries as well," he said.
