Signature dishes include Braised Lamb Curry Varuval by Chef Manohar Kalanjiam from Kalamatas Café, a robust and aromatic curry designed for lovers of bold flavours.
Chef Norhisyam Jamain of D’Salai Keningau brings his tender and spicy Daging Masak Lada Putih, while Chef Abd Hafiz Hanafi from Selera Kebun Kundasang offers Ayam Salai Masak Lemak Cili Api, a smoky chicken dish rich with creamy coconut milk.
Completing the line-up is Chef Johan Sinam of Sup Ikan Heritage with his Asam Pedas Ikan Bambangan, a tangy fish stew that incorporates the locally prized bambangan fruit.
These dishes are not just culinary highlights - they represent the effort to bring Sabah’s flavours under one roof.
As Pang noted, “Our guests do not have to travel all the way to Kundasang or Keningau to experience these dishes.
“We have brought them here, making ON22 a destination for the best of Sabah’s specialities.”
Preparation for the buffet began as early as June 2024, with chefs and the culinary team meticulously designing a menu that balances proteins, vegetables and local ingredients to suit a wide array of palates.
“We wanted to ensure everything was perfect for our guests when Ramadan arrived,” said Pang, stressing the importance of planning and execution in delivering a seamless dining experience.
In addition to its culinary appeal, ON22 aims to create a festive atmosphere that reflects both modern and traditional influences.
Whether for a family gathering, corporate event, or a simple indulgent meal, the restaurant promises a vibrant setting that encapsulates the spirit of Ramadan.
“It is all about creating connections and ensuring everyone feels welcome,” Pang said.
The hotel also offers a range of promotions to make the experience accessible to more people.
Early bird specials and group packages are available, including a “buy 10, dine for 12” offer.
Pang highlighted the variety of channels used to promote these packages, including social media and the hotel’s first-ever live-stream event.
“The live stream, which offered a one-time 50 per cent discount during its launch, was an exciting new approach for us.
“It allows us to reach different audiences and ensure everyone has the opportunity to enjoy what we have prepared,” he said.
Hyatt Centric’s commitment to community extends beyond Ramadan.
According to Pang, the hotel’s philosophy is rooted in continuing to work with local talents and incorporating Sabah’s rich culinary heritage into its offerings year-round.
“This is not just a one-time effort. It is about building long-term relationships with our community and ensuring their stories are shared through food,” he said.
For those eager to experience this gastronomic journey, ON22’s Ramadan buffet bookings are now open.
With limited slots, guests are encouraged to reserve early to secure a place.
By bringing together the flavours of Sabah, local chefs’ talents and communal dining warmth, Hyatt Centric Kota Kinabalu reimagines the Ramadan experience with authenticity and innovation.
