HEARD of home-made ferment coffee? The virtues claimed are interesting – 100pc non-alcoholic, can aid digestion, can help detox, can help sleep well.
So what’s so special about it?
“It’s home-made, aid digestion, can aid detox. Some people cannot go to toilet for more than five or seven days, drink a bit of this it can help , I would say a very important point,” asserted KL-hailed proprietor Neilsen Lim – one of the participants in the Sept 30-Oct 2 Sabah International Coffee Festival at Suria Sabah.
“Secondly, you can sleep well. Some coffee, if you drink after 4pm in the afternoon, at night you cannot sleep but this one when you sleep, its’ very soft,” Lim claimed.
“Then its very important this is non-alcoholic, 100pc no alcohol,” he said.
But its Production is a tedious process, Lim says.

“It takes more than three months to produce because we need to do cold brews involving a lot of steps, then we need to put it in a chiller, need to put it outside for warmth in warm weather, after that put it into the chiller again and warm it again,” Lim said.
“But very important is water, we don’t use normal water, we need to put in a very clean, very good water, not the normal pipe water or mineral water,” he said.
“Another very important thing is you must use very good coffee beams.”
“We don’t put ordinary coffee beans inside but use mostly high grade Arabica beans from Panama and Costa Roca,” Lim noted.
“I can say that in the whole Malaysia we are the first one to do this, the only ferment coffee, my wife (Angeline Lam) and I were just like playing around with it until success,” Lim asserted.
